I made this because I need to store all my food projects and recipes somewhere. You know how many times people say “Can you send me the recipe for this?” and I can’t give them a recipe because I don’t have one. Technically, I’m still working my way through the American Heart Association Cookbook, but I’ve heavily modified and edited those recipes so much that it isn’t very easy to just copy-and-paste. I record recipes in the LoseIt app, and am storing them here for future reference and sharing, if people want recipes for the things I’ve been making.

Lightened-Up Mac’n’Cheese
A bit of a lightened-up mac & cheese, with less fat and fewer calories than the alternative. Toss elbow macaroni with an easy to make cheese sauce, top it with breadcrumbs and put it under the broiler for a few minutes. We made this for a Super Bowl snack!

Air Fried Cream Cheese Wontons (“Rangoons”)
So we made air fried cream cheese wontons for a Super Bowl Snack. Eric and I were, of course, inspired by crab rangoons, but we didn’t want to buy and cook crabmeat. (You can’t really taste crab meat in crab rangoons anyway!)

Fudgy Almond Flour Brownies (GF)
These almond flour brownies were AMAZING (although maybe not too entirely healthy). I used a mix of almond flour and all-purpose wheat flour, but these brownies can easily be made gluten-free by swapping the wheat flour with rice flour or any type of gluten free baking mix.

Orange Cream Mini Cupcakes
I made these orange flavored mini cupcakes in the shape of a dragon for Chinese New Year (2024 is the year of the dragon!) The cupcakes are made of a light and fluffy orange flavored sponge cake, topped with a light orange-flavored whipped cream. (And lots of sprinkles!)

Chocolate Dipped Fortune Cookies
I made these chocolate dipped fortune cookies for a Super Bowl Dessert. Fortune Cookies were invented in San Francisco! I used San Franciscan Ghirardelli chocolate chips, and I also happened to have some 49ers-colored sprinkles leftover from Chinese New Year!
