Blueberry lavender baked oatmeal is a heart healthy breakfast indeed

Lavender is one of my favorite flavors ever — herbal, but not too cloying. I think it goes particularly well with blueberries.

Baked oatmeal is my favorite thing ever because it’s convenient, filling, and easy to meal prep. I wouldn’t bother to eat a relatively-wholesome breakfast if it wasn’t already prepared, in the fridge, ready to go first thing in the morning.

I don’t ever reheat this — I just grab it from the fridge and eat it cold. You, however, can reheat this if you want. I suspect that baked oatmeal reheats particularly well.

Blueberry Lavender Baked Oatmeal

Blueberry Lavender Oatmeal

Servings: 6

Ingredients

  • 1½ cups unsweetened applesauce
  • 1 egg
  • ¼ cup liquid egg whites
  • ¼ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2 tablespoon culinary lavender
  • 1 cup milk of your choice
  • 2 cups uncooked old fashioned oats
  • 12 ounces blueberries

Instructions

  • Pre-heat the oven to 375 °F
  • Spray a 13×9-inch baking dish with nonstick spray
  • Whisk together the applesauce, egg, egg white, sugar, baking powder, vanilla, salt, and culinary lavender
  • Stir in milk of your choice
  • Stir in uncooked oats
  • Stir in blueberries
  • Pour into baking dish and bake for about 45 minutes until a toothpick or knife inserted into the center of the oatmeal comes out clean. If you're using frozen blueberries, you might have to bake it a little longer (about one hour), so keep your eyes on it!

Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change.
