We eat a huge amount of pasta in our house because it’s one of the foods my children will consistently eat, and it’s also a great way to encourage them to eat vegetables. We don’t eat a ton of turkey sausage, but it’s always an interesting pasta topping — just be sure to get the lowest sodium and saturated fat content you can find.
Turkey Sausage and Tomato Pasta
Servings: 4
Ingredients
- 8 ounces rotini pasta
- 8 ounces turkey sausage
- 2 tsp olive oil (divided)
- ½ medium onion (diced)
- 2 garlic cloves (minced)
- 1 pound fresh tomatoes (chopped)
- 1 teaspoon fresh oregano (chopped)
- ¼ teaspoon ground black pepper
- 1 ounce grated Parmesan cheese
- 2 tablespoon fresh basil or oregano leaves (chopped)
Instructions
- Cook pasta according to package instructions. Be sure to omit the salt.
- Heat 1 teaspoon olive oil in a skillet and cook the sausage over medium-high heat until browned. Transfer to a plate.
- Add the other 1 teaspoon of olive oil to the same skillet and cook the minced garlic and chopped onion. Cook for about 3 minutes over medium-low heat, until the garlic and onion are soft.
- Add the chopped tomatoes, chopped oregano and black pepper. Increase the heat to medium-high and bring to a simmer. Cook at a simmer for about 5 minutes, until the tomatoes start breaking down to a sauce-like consistency.
- Toss together the tomato sauce, pasta, grated parmesan cheese, and sausage. Top with chopped fresh basil or oregano.
