Always with the summer fruit. Fruit is great in the summer, but it’s available for such a limited time that I always jump on it and bake everything all at once. I always eat baked oatmeal for breakfast because it’s convenient to meal prep ahead of time. I wouldn’t eat a healthy breakfast if I didn’t have it ready to go in the fridge.

You can reheat baked oatmeal but I usually don’t, because I don’t prefer to put a tremendous amount of effort into my breakfast each morning. It’s fine cold, straight from the fridge. This is a simple recipe and you don’t need to be too precise with it.

Blackberry Nectarine Baked Oatmeal

Ingredients

  • 1½ cups unsweetened applesauce
  • ¼ cup liquid egg whites
  • ¼ cup sugar granulated
  • 1 teaspoon vanilla extract
  • ¾ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ teaspoon cinnamon
  • 1 cup milk of your choice
  • 2 cups old fashioned rolled oats
  • 2 nectarines (sliced)
  • 1½ cups blackberries

Instructions

  • Preheat oven to 375 °F. Spray an 8×8-inch casserole dish with nonstick spray.
  • In a large mixing bowl, whisk together the applesauce, egg and egg whites until eggs are fully beaten.
  • Whisk in the sugar, vanilla extract, baking powder, salt and cinnamon
  • Stir in the milk
  • Stir in the oats
  • Stir in the sliced nectarines and blackberries
  • Pop the whole thing in the oven and bake for 45 minutes. If you're using frozen fruit, you might need to bake it a little longer (about an hour), so keep an eye on it! You'll know it's done when a skewer or knife inserted into the center of the oatmeal comes out clean.

I’ve always liked cooking, but we used to eat crap a lot — like buttery mashed potatoes, creamy sauces and rich desserts. Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change.
