Apple cider ice pops

I’m ready for fall and eager for apple cider season, but it’s still so hot and humid out!! I made some apple cider popsicles so I could stay cool and enjoy cider at the same time.

Apple Cider Ice Pops

Equipment

  • 6-cavity ice pop mold (or 6 paper cups)

Ingredients

  • 4 cups apple cider
  • ½ cinnamon stick (or a pinch of ground cinnamon)
  • ½ teaspoon vanilla extract

Instructions

  • Pour 4 cups of cider into a medium saucepan with a piece of cinnamon stick and bring to a boil. Continue to boil for the lid off for about 30 minutes until the liquid has reduced by half. You should end up with 2 cups of liquid at the end.
  • Remove the reduced cider from the heat, remove the cinnamon stick and stir in the vanilla extract. Set the cider aside to cool for a while.
  • Pour into ice pop molds and set in the fridge. If your ice pop mold doesn't come with sticks, you can insert popsicle sticks after the first hour of freezing.
  • The popsicles need to freeze for about 4 to 6 hours before they're ready to unmold and eat.

Hello, world!

I’ve always liked cooking, but we used to eat crap a lot — like buttery mashed potatoes, creamy sauces and rich desserts. Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change. Following his heart attack, we needed to cut sodium, sugar, saturated fats (you know, most of our favorite foods!)
