I made Bananas Foster Baked Oatmeal! Cooked, roasted bananas are delicious — and naturally sweet enough that you don’t need much added sugar to make them absolutely delicious! Generally speaking, bananas work great as a replacement for butter/fat in many baked goods.
I had some rum extract in my pantry, so I decided to do a “Bananas Foster” baked oatmeal. Vanilla extract will also work fine — don’t feel like you need to run out and buy rum extract to make this recipe!
Baked oatmeal probably reheats well, but I’ve never reheated it. I just grab it right out of the fridge and eat it cold; it’s like banana bread for breakfast. Grab & go breakfasts are important to me, because if I didn’t have breakfast meal prepped and ready in the fridge, I wouldn’t eat it.
Bananas Foster Baked Oatmeal
Ingredients
- 3 mashed bananas
- ⅓ cup maple syrup
- 1 egg
- ¼ cup liquid egg whites
- 1 teaspoon rum extract
- ½ teaspoon vanilla extract
- ¼ teaspoon cinnamon
- ¼ tsp nutmeg
- ¼ teaspoon salt
- 2 cups milk of your choice
- 2½ cups uncooked old-fashioned rolled oats
- ½ cup chopped pecans
Instructions
- Preheat the oven to 375 °F. Lightly spray a 9×13-inch baking dish with nonstick spray.
- In a large bowl, mash 3 bananas with a potato masher.
- Whisk in the maple syrup
- Beat in 1 egg and ¼ cup egg white
- Whisk in the rum extract, vanilla extract, baking powder, salt, cinnamon and nutmeg
- Stir in the milk
- Stir in the oats
- Stir in the chopped pecans
- Pour the mixture into the prepared baking dish. Bake at 375 °F for 45 minutes. It's done when the oatmeal is golden-brown. A toothpick/knife/skewer inserted into the center of the oatmeal should come out clean.
