Eric wanted to make BBQ chicken drumsticks for our Labor Day picnic.
Served it with coleslaw and grilled corn, which were both really good — recipes for corn and coleslaw forthcoming at some point!
Grill the chicken with a dry rub, and brush on some no-sugar-added BBQ sauce at the end. The lack of sugar takes the calorie count/sugar content down quite a bit, and I didn’t really miss the sugar at all. I’m not being paid to shill G. Hughes sugar-free BBQ sauce, but I should be getting paid, as the brand of BBQ sauce I regularly buy. BBQ sauce is one product where I’m O.K. with artificial sweeteners (usually has a strange aftertaste.)
N ate two of these, double-fisting it like a little caveman. A hit with kids!
BBQ Chicken Drumsticks
Ingredients
- 1 pound chicken drumsticks
- ¼ cup no-sugar-added BBQ sauce
Spice Rub
- ½ tablespoon brown sugar
- ½ teaspoon ground black pepper
- ½ teaspoon smoked paprika
- ¼ teaspoon garlic powder
- ¼ teaspoon cumin powder
- ¼ teaspoon salt
Instructions
- Mix all of the spice rub ingredients together in a small bowl. Put the drumsticks in a large bowl and rub the spice all over the chicken until the chicken is fully coated. Cover with plastic wrap and let it sit in the fridge for 30 minutes. (Be sure to thoroughly wash your hands after handling raw chicken!!!!)
- Fire up the grill and cook the chicken until a thermometer registers an internal temperature of 165 °F in the thickest part of the chicken drumstick. Towards the end of cooking, brush on a thin layer of BBQ sauce.
