We’re ethnically half-Chinese, so we really love making stir fries in our house. I’ve gotten really good at making stir fries over the past few years and am always trying to improve my stir-frying game. A lot of “Chinese Takeout” has way, way too much sodium in it, and you can cut the sodium tremendously by just cooking the things at home (like so many foods!! Idk what sort of mysterious calorie/sodium-multiplying machines so many restaurants use.) Beef and broccoli is one of those classic “takeout” foods that has the potential to be really wholesome and healthy.

I don’t own a wok because I don’t like extraneous gadgets/tools and try to keep my kitchen as minimalist as possible. A skillet is fine for most stir-fries.

Chinese stir-fries are usually cooked at a high heat, and that’s really the key to making it taste like “takeout.”

Beef and Broccoli

Ingredients

  • 1 cup uncooked brown rice
  • 1 pound boneless sirloin or flank steak (cut into thin strips across the grain)
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 2 garlic cloves (minced)
  • 1 teaspoon grated fresh ginger root
  • 1 teaspoon brown sugar
  • 1 teaspoon canola oil
  • 2 broccoli crowns (cut into florets)
  • 4 green onions (cut into matchsticks)

Sauce Ingredients

  • ½ cup low sodium beef broth
  • 1 tablespoon reduced sodium soy sauce
  • ½ tablespoon brown sugar
  • 1 teaspoon dark soy sauce
  • 2 teaspoon sesame oil
  • 1 tablespoon cornstarch

Instructions

  • Cut any visible fat off the beef, and cut the beef across the grain into thin strips.
  • In a bowl, mix together the cornstarch, water, garlic, ginger and 1 teaspoon brown sugar. Add the beef to the mixture and stir to coat the beef. Cover with plastic wrap and set in the fridge to marinate for 30 minutes.
  • Cook the rice according to package instructions.
  • Whisk together the sauce ingredients in a small bowl and set aside.
  • Heat 1 teaspoon of oil in a skillet over medium-high heat, and cook the broccoli and green onions for 2 to 3 minutes, or until just tender-crisp.
  • Remove the broccoli and green onions from the skillet and set aside on a plate.
  • Cook the beef in the same skillet. You might need to spritz the skillet with a little nonstick spray. Actually, you might want to use 2 skillets, or divide the beef into two batches if you can. If you add too much beef to the skillet, the beef will just stew in the pan. If you cook the beef in two batches, it'll brown up nicely.
  • Let the beef sit in the hot skillet for a minute or two without touching it, just to get a good sear on it and let the sugar in the marinade caramelize a little bit. Then, stir-fry the beef for another 2 to 3 minutes, until the beef is almost cooked through (you should still see just a little bit of pink/blood)
  • Add the sauce to the skillet and stir it around with the beef for a minute until thickened.
  • Add the broccoli and green onions back to the skillet and stir to coat with the sauce.
  • Spoon the beef and broccoli over the rice to serve.

I’ve always liked cooking, but we used to eat crap a lot — like buttery mashed potatoes, creamy sauces and rich desserts. Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change.
