Always with the summer fruit. Fruit is great in the summer, but it’s available for such a limited time that I always jump on it and bake everything all at once. I always eat baked oatmeal for breakfast because it’s convenient to meal prep ahead of time. I wouldn’t eat a healthy breakfast if I didn’t have it ready to go in the fridge.
You can reheat baked oatmeal but I usually don’t, because I don’t prefer to put a tremendous amount of effort into my breakfast each morning. It’s fine cold, straight from the fridge. This is a simple recipe and you don’t need to be too precise with it.
Blackberry Nectarine Baked Oatmeal

Ingredients
- 1½ cups unsweetened applesauce
- ¼ cup liquid egg whites
- ¼ cup sugar granulated
- 1 teaspoon vanilla extract
- ¾ teaspoon baking soda
- ¼ teaspoon salt
- ¼ teaspoon cinnamon
- 1 cup milk of your choice
- 2 cups old fashioned rolled oats
- 2 nectarines (sliced)
- 1½ cups blackberries
Instructions
- Preheat oven to 375 °F. Spray an 8×8-inch casserole dish with nonstick spray.
- In a large mixing bowl, whisk together the applesauce, egg and egg whites until eggs are fully beaten.
- Whisk in the sugar, vanilla extract, baking powder, salt and cinnamon
- Stir in the milk
- Stir in the oats
- Stir in the sliced nectarines and blackberries
- Pop the whole thing in the oven and bake for 45 minutes. If you're using frozen fruit, you might need to bake it a little longer (about an hour), so keep an eye on it! You'll know it's done when a skewer or knife inserted into the center of the oatmeal comes out clean.
