Lavender is one of my favorite flavors ever — herbal, but not too cloying. I think it goes particularly well with blueberries.
Baked oatmeal is my favorite thing ever because it’s convenient, filling, and easy to meal prep. I wouldn’t bother to eat a relatively-wholesome breakfast if it wasn’t already prepared, in the fridge, ready to go first thing in the morning.
I don’t ever reheat this — I just grab it from the fridge and eat it cold. You, however, can reheat this if you want. I suspect that baked oatmeal reheats particularly well.
Blueberry Lavender Oatmeal
Servings: 6
Ingredients
- 1½ cups unsweetened applesauce
- 1 egg
- ¼ cup liquid egg whites
- ¼ cup granulated sugar
- 1 tsp vanilla extract
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 2 tablespoon culinary lavender
- 1 cup milk of your choice
- 2 cups uncooked old fashioned oats
- 12 ounces blueberries
Instructions
- Pre-heat the oven to 375 °F
- Spray a 13×9-inch baking dish with nonstick spray
- Whisk together the applesauce, egg, egg white, sugar, baking powder, vanilla, salt, and culinary lavender
- Stir in milk of your choice
- Stir in uncooked oats
- Stir in blueberries
- Pour into baking dish and bake for about 45 minutes until a toothpick or knife inserted into the center of the oatmeal comes out clean. If you're using frozen blueberries, you might have to bake it a little longer (about one hour), so keep your eyes on it!
