Cheeseburger salad is a heart healthy and tastes just like a Big Mac

Cheeseburger salad is a great meal to take to the beach, and it was a huge hit with my kindergartener and preschooler. It’s basically a breadless Big Mac. I always love a nice dinner salad, especially when it tastes like fast food.

Cheeseburger Salad

Ingredients

  • 8 cups shredded Romaine lettuce
  • 12 ounces 96% lean round beef
  • 4 ounces shredded reduced-fat cheddar cheese
  • ¼ cup onion (finely chopped)
  • 2 Roma (plum) tomatoes (chopped)
  • 20 dill pickle slices (chopped)

Copycat Big Mac Sauce

  • ¼ cup light mayonnaise
  • 2 tablespoon ketchup
  • 1 tablespoon sweet relish
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

Instructions

  • Mix all of the Big Mac sauce ingredients together and set aside in the fridge.
  • Heat a skillet over medium-high heat, spritz it with a little nonstick spray, and cook the ground beef until all the pink is gone. Set the beef aside.
  • Arrange the lettuce, shredded cheese, ground beef, chopped onion, chopped dill pickle and Big Mac sauce in a bowl.

I’ve always liked cooking, but we used to eat crap a lot — like buttery mashed potatoes, creamy sauces and rich desserts. Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change. Following his heart attack, we needed to cut sodium, sugar, saturated fats (you know, most of our favorite foods!)
