Cinnamon Roll Baked oatmeal

Cinnamon rolls aren’t the heart-healthiest or most filling breakfast, nor are they the kindest to my digestion. I love cinnamon rolls, so I decided to make an oatmeal version instead. I always like eating baked oatmeal in the morning because it’s super-filling, and it keeps me full for a long time. I love baked oatmeal because it’s so easy to meal prep, and I need to have my breakfast ready-to-go and waiting in the fridge when I wake up, or else I won’t bother to eat it.

I eat this cold, I never bother to re-heat baked oatmeal at all but you can feel free to heat it up if you want to. I’m sure it heats up well in the microwave!

Cinnamon Roll Baked Oatmeal

Ingredients

  • 1½ cups unsweetened applesauce
  • ¼ cup egg whites
  • ⅓ cup brown sugar
  • 3 tablespoon creamy almond butter
  • 2 tablespoon butter (melted)
  • 1 tablespoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 2 cups milk of your choice
  • 3 cups uncooked old fashioned oats

Cinnamon Swirl

  • ⅓ cup brown sugar
  • 2 teaspoon cinnamon

Vanilla Icing

  • 2 ounces Neufchâtel cheese (softened)
  • 2 tablespoon confectioner's sugar
  • 1-2 tablespoon milk of your choice
  • ½ teaspoon vanilla extract

Instructions

  • Preheat the oven to 375 °F . Lightly spray a 9×13-inch baking dish with nonstick spray.
  • In a large bowl, whisk together the eggs, applesauce, ⅓ cup sugar and almond butter. Whisk in the cinnamon, baking soda, salt and vanilla extract.
  • Stir in the melted butter and milk.
  • Stir in the uncooked oats.
  • Stir together ⅓ cup brown sugar and 2 teaspoon cinnamon, and set aside.
  • Pour the oatmeal into the prepared baking dish
  • Sprinkle the cinnamon and brown sugar mixture on top, and use a dull knife to swirl it around through the oatmeal.
  • Bake for 45 minutes until browned around the edges. When the oatmeal is done, a knife or skewer inserted into the center of the oatmeal should come out clean.
  • While the oatmeal is baking, make the vanilla icing: stir together the Neufchâtel cheese, confectioner's sugar, vanilla extract and milk. Wait until the oatmeal cools a bit after coming out of the oven and evenly spread the vanilla icing over the top.

Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change.
