Who doesn’t love fish nuggets? My children love fish sticks. These are basically heart-healthy, minimally-processed fish sticks (served with a side of roasted sweet potato fries and chopped green beans)

Crunchy Fish Nuggets

Ingredients

  • 1 pound cod loin
  • 3 tablespoon liquid egg whites
  • ½ cup yellow cornmeal
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon salt

Dipping Sauce

  • ¼ cup light mayonnaise
  • 1½ tablespoon lemon juice
  • ½ tablespoon sweet pickle relish
  • ¼ teaspoon garlic powder

Instructions

  • Preheat the oven to 450 °F
  • Line a baking sheet with foil and spray with nonstick spray
  • Cut the fish into one-inch chunks. A thicker piece of white fish, like cod loin, works well.
  • Put the egg whites and fish together in a bowl and stir to cover all the fish nuggets with egg white.
  • Mix the cornmeal, chili powder, garlic powder, oregano, pepper and salt together in a medium bowl or dish and dip the fish nuggets into the cornmeal mixture, turning to coat.
  • Transfer the fish nuggets to the baking sheet. Put the baking sheet in the oven and bake for 12-14 minutes, until the cornmeal coating turns golden brown. Use a spatula to flip the fish nuggets over around the 7-minute mark.
  • In a small bowl, whisk the dipping sauce ingredients together.

Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change.
