We’ve got a ton of tomatoes growing in the garden right now. When you’ve been inundated with excessive tomatoes, you make tomato salad.
Fresh Tomato Salad

Ingredients
- 2 roma (plum) tomatoes (chopped)
- 1 cup cherry tomatoes
- 2 ounces mozzarella cheese (chopped or shredded)
- 5 green olives (sliced)
- 2 tablespoon chopped red onion or shallot
- 2 tablespoon chopped fresh basil
Balsamic Dressing
- 1 tablespoon balsamic vinegar
- 1 tablespoon olive oil
- ¼ teaspoon salt
- 1 pinch ground black pepper
Instructions
- Combine the vinaigrette dressing ingredients in a small bowl, and set aside.
- Combine the tomatoes, olives, mozzarella cheese, onion, basil and vinaigrette dressing in a bowl. Cover the bowl with plastic wrap and put it in the fridge to marinate for an hour. (Less than 1 hour is also fine if you're in a big hurry.)
