Fresh tomato salad marinated in balsamic and fresh basil

We’ve got a ton of tomatoes growing in the garden right now. When you’ve been inundated with excessive tomatoes, you make tomato salad.

Fresh Tomato Salad

Ingredients

  • 2 roma (plum) tomatoes (chopped)
  • 1 cup cherry tomatoes
  • 2 ounces mozzarella cheese (chopped or shredded)
  • 5 green olives (sliced)
  • 2 tablespoon chopped red onion or shallot
  • 2 tablespoon chopped fresh basil

Balsamic Dressing

  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • 1 pinch ground black pepper

Instructions

  • Combine the vinaigrette dressing ingredients in a small bowl, and set aside.
  • Combine the tomatoes, olives, mozzarella cheese, onion, basil and vinaigrette dressing in a bowl. Cover the bowl with plastic wrap and put it in the fridge to marinate for an hour.
    (Less than 1 hour is also fine if you're in a big hurry.)

I’ve always liked cooking, but we used to eat crap a lot — like buttery mashed potatoes, creamy sauces and rich desserts. Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change. Following his heart attack, we needed to cut sodium, sugar, saturated fats (you know, most of our favorite foods!)
