Snickerdoodles are really one of the best holiday cookies, and I felt inspired by Starbucks. Could I create a coffee-flavored baked oatmeal with cinnamon/sugar snickerdoodle flavors? I used some strong-brewed coffee to replace some of the milk in this recipe.
Baked oatmeal is my favorite breakfast because it’s convenient, filling, and easy to meal prep. I wouldn’t bother eating a relatively-wholesome breakfast if hadn’t already prepared it, ready to go first thing in the morning.
I don’t ever reheat this — I just grab it from the fridge and eat it cold. You, however, can reheat this if you want. I suspect that baked oatmeal reheats particularly well.
I think this snickerdoodle baked oatmeal recipe would be fantastic with cinnamon chips. I didn’t want to buy a whole bag of cinnamon chips just for one recipe, so I skipped those, but try it if you want to, and let me know how it turned out!
Snickerdoodle Latte Baked Oatmeal
Ingredients
- 1½ cups unsweetened applesauce
- ⅓ cup firmly packed brown sugar
- ¼ cup liquid egg white
- 1½ teaspoon cinnamon
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 1 tablespoon melted butter
- 1 cup strong brewed coffee
- 1 cup milk of your choice
- 3 cups uncooked old fashioned oats
Cinnamon Sugar Topping
- 1 tablespoon granulated white sugar
- ¼ teaspoon cinnamon
Instructions
- Preheat the oven to 375 °F. Lightly spray a 9×13-inch baking dish with nonstick.
- Whisk together the applesauce and brown sugar
- Whisk in the egg and egg whites, making sure the egg is well-beaten and fully incorporated.
- Whisk in the cinnamon, baking powder, salt, vanilla extract
- Stir in the coffee and the milk
- Stir in the oats
- Pour the batter into the prepared baking dish and bake for about 45 minutes, until the edges are lightly brown and a toothpick or knife inserted into the center of the oatmeal comes out clean.
- Stir together 1 tablespoon of sugar + ¼ teaspoon cinnamon and sprinkle over the top.
