Sloppy joe with lean low-fat beef and hidden veggies

Hidden veggies ftw!!! My kindergartener ate this all up “This is delicious Mommy, put it down as a win!” Lol look at the ingredient list, see all the carrots, onions and squash in there, he had no idea.

Hidden Veggie Sloppy Joes

Ingredients

  • 1 pound 96% lean ground beef
  • 4 store-bought hamburger buns
  • 1 tablespoon olive oil
  • 1 summer squash (chopped)
  • ½ medium onion (chopped)
  • 1 carrot (chopped)
  • 1 garlic clove (minced)
  • 15 ounces canned whole tomatoes (drained and chopped)
  • 2 green onions (chopped)
  • 8 ounces canned tomato sauce
  • 1 tbsp brown sugar
  • 2 teaspoon chili powder
  • 2 teaspoon Worcestershire sauce
  • 1 teaspoon mustard powder
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  • Heat 1 tablespoon olive oil in a large skillet over medium heat
  • Add the chopped onion, chopped summer squash and chopped carrot to the skillet and cook until the onion is soft and translucent.
  • Add the minced garlic clove and cook for 1 minute
  • Add the ground beef and cook until you can't see any more pink
  • Add the chopped whole tomatoes, the tomato sauce, green onions, brown sugar, chili powder, mustard powder, Worcestershire sauce, salt, and pepper. Turn the heat down to medium-low and let it simmer for about 15 minutes (you might need to turn the heat all the way down to low)
  • Spoon the beef and veggie mixture onto some store-bought hamburger buns.

Hello, world!

I’ve always liked cooking, but we used to eat crap a lot — like buttery mashed potatoes, creamy sauces and rich desserts. Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change. Following his heart attack, we needed to cut sodium, sugar, saturated fats (you know, most of our favorite foods!)
