Orange Sweet Potatoes

Orange Sweet potatoes - sweet potatoes mashed with orange juice, citrus zest and warm spices.

Orange sweet potatoes are an easy, lightened-up way to make mashed sweet potatoes! The citrus flavors are fantastic; I love that combo of orange and warm spices during the holidays.

I served this as a side dish with Orange Baked Haddock, which also tastes like Christmas to me. I also served it as a side with our official Christmas Dinner this year!

Orange Sweet Potatoes

Servings: 4
Calories: 117kcal

Ingredients

  • 2 large sweet potatoes (or 3 medium-sized ones)
  • 2 teaspoon orange zest (about 1 orange worth)
  • ½ cup orange juice (about 1 orange worth)
  • 2 tablespoon packed brown sugar
  • ¼ teaspoon cinnamon

Instructions

  • Peel the sweet potatoes and cut them into cubes.
  • Put the potatoes in a pot and cover with water. Bring the pot to a boil over high heat.
  • Continue to boil the potatoes for 15 to 20 minutes, until the potatoes are easily pierced with a fork.
  • While the potatoes are cooking, zest and juice 1 orange.
  • When the potatoes are done cooking, drain the water out of the pot.
  • Add the orange zest, orange juice, brown sugar and cinnamon to the pot along with the cooked sweet potatoes.
  • Mash it all up with a potato masher.

I’ve always liked cooking, but we used to eat crap a lot — like buttery mashed potatoes, creamy sauces and rich desserts. Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change. Following his heart attack, we needed to cut sodium, sugar, saturated fats (you know, most of our favorite foods!)
