I made Monster Trail Mix Baked Oatmeal! Those Target trail mixes are delicious but not-too-healthy, right? Well, I was in the mood to make something Monster Trail Mix flavored after I baked those Monster Trail Mix cookies a couple weeks ago. Baked oatmeal is my all-time favorite breakfast meal prep.
I bought a bag of Monster Trail Mix from Target because I didn’t feel like buying chocolate chips, peanut butter chips, or M&Ms — I just wanted all of the things already combined.
Baked oatmeal probably reheats well, but I’ve never reheated it. I just grab it right out of the fridge and eat it cold; it’s like cake for breakfast. Grab & go breakfasts are important to me, because if I didn’t have breakfast meal prepped and ready in the fridge, I wouldn’t eat it.

Monster Trail Mix Baked Oatmeal
Ingredients
- 1½ cups unsweetened applesauce
- ½ cups low fat peanut butter powder (like PB2)
- ¼ cup maple syrup
- ¼ cup liquid egg whites
- 2 tablespoon peanut butter
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- 1½ cups milk of your choice
- 2½ cups uncooked old fashioned rolled oats
- 1 cup Monster Trail Mix (or a mix of peanuts, raisins and M&Ms)
Instructions
- Preheat the oven to 375 °F. Lightly spray a 9×13-inch baking dish with nonstick spray.
- In a large bowl, whisk together the applesauce, peanut butter powder and maple syrup.
- Use a whisk to beat in the egg and egg white.
- Whisk in the peanut butter, vanilla extract, baking powder, cinnamon and salt
- Stir in the milk
- Stir in the oats
- Stir in the trail mix
- Pour the mixture into the prepared baking dish. Bake at 375 °F for about 45 minutes. Oatmeal is done when the edges turn golden-brown and a toothpick/knife inserted into the center of the oatmeal comes out clean.
