Plum clafoutis is a healthy dessert for weight loss

Plums are great in late summer/early autumn, and they’re only here for a short while. I always end up buying tons and tons and tons of seasonal fruits and finding excuses to make dessert. Clafoutis is a relatively healthy dessert, basically a baked custard bolstered with flour and filled with fruit. (Cherries and peaches are also great! I just wanted to use plums.) Low in sugar, high in protein!

Ingredients

  • 1½ tablespoon white granulated sugar
  • ¼ teaspoon cinnamon
  • 1 cup all-purpose flour
  • ½ teaspoon cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 egg
  • ½ cup liquid egg whites
  • ¼ cup brown sugar (firmly packed)
  • 1¼ cup skim milk
  • 1 tablespoon vanilla extract
  • 1 teaspoon almond extract
  • 3 tablespoon sliced almonds

Instructions

  • Preheat the oven to 350 °F. Lightly spray a 9-inch cake pan with nonstick spray.
  • Stir together 1½ tablespoons white granulated sugar and ¼ teaspoon cinnamon in a small bowl. Set aside for later.
  • In a medium bowl, whisk together the dry ingredients: 1 cup of flour, ½ teaspoon cinnamon and ¼ teaspoon nutmeg.
  • In another bowl, use an egg beater to mix the egg, egg whites and brown sugar until pale yellow and foamy. Beat in the milk, vanilla extract and almond extract.
  • Mix the flour mixture into the egg/milk mixture.
  • Mix the sliced plums with an extra tablespoon of flour, just to let a light coating (this will prevent the fruit sinking to the bottom) Then, stir the sliced plums into the mixture.
  • Pour into the prepared cake pan and sprinkle with the sliced almonds and reserved cinnamon/sugar mixture.
  • Bake for about 45 to 50 minutes, until a skewer or knife inserted into the middle of the cake comes out clean.

Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change.
