Easy three ingredient maple peanut butter popcorn balls

THREE INGREDIENTS! These popcorn balls are so easy to make — just three ingredients! Air popped popcorn, and a simple “caramel” made of equal parts maple syrup and peanut butter. These were a huge hit with my children. They were so easy, I’m definitely gonna make them again.

Air popped popcorn is a great whole-grain, fat-free snack in general. Anyone trying to eat a heart-healthier diet should definitely consider owning an air popper. I’m sure oil-popped popcorn would also work great here, but it’d change the calorie count a bit.

Maple Peanut Butter Popcorn Balls

Servings: 18
Calories: 82kcal

Equipment

  • 1 air popper popcorn popper
  • waxed paper

Ingredients

  • 10 cups air popped popcorn (about 6 tablespoons un-popped kernels)
  • ½ cup peanut butter
  • ½ cup maple syrup

Instructions

  • Measure out 10 cups of air popped popcorn and put it in a large mixing bowl.
  • In a small saucepan, whisk together the ½ cup of peanut butter and ½ cup of maple syrup over medium heat until the mixture begins to boil.
  • When the peanut butter/maple syrup begins to boil, pour it over the popcorn and use a large spoon or spatula to stir the mixture into the popcorn until all of the popcorn is completely coated.
  • Spread the popcorn out on a large sheet of waxed paper until it's cool enough to handle without burning yourself.
  • Grab handful-sized balls of popcorn and smoosh them together in your fist. I managed to get about 18 fist-sized popcorn balls with this recipe.

Hello, world!

I’ve always liked cooking, but we used to eat crap a lot — like buttery mashed potatoes, creamy sauces and rich desserts. Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change. Following his heart attack, we needed to cut sodium, sugar, saturated fats (you know, most of our favorite foods!)
