Weekly Recap

Well, I’m trying to be more consistent with logging and tracking meals. Consistency is really the key with sticking to a healthy lifestyle! This page is also a weekly directory of everything I’ve cooked for the week. I think it’ll help a lot to be able to go back and look at these.

Next week, I promise to do a better job recording what I ate for lunch. I usually eat leftovers from dinner. I don’t plan or cook any “lunch meals,” because it always ends up being too much food for the week. There’s not really time in my life to make lunch, anyway.

Friday, January 12:

Breakfast:

  • Espresso Chocolate Chip Baked Oatmeal
  • Nonfat Greek yogurt
  • Banana
  • Coffee w./ almond milk

Dinner:

  • Minestrone Soup – very good; tasted like something you’d get in Olive Garden!
  • Air Fryer Pepperoni Pizza Rolls

Saturday, January 13:

Breakfast:

  • Fruit & Seed Breakfast Cookies
  • Nonfat Greek yogurt
  • Banana
  • Coffee w./ almond milk

Dinner:

  • Easy Beef Lasagna Rolls – can’t really go wrong with cheesy lasagna noodles & meat sauce
  • Garlic Green Beans – excellent! Making them again for Chinese New Year!
  • Date And Almond Butter Truffles – I always love date caramels

Sunday, January 14:

Breakfast:

  • Fruit & Seed Breakfast Cookies – these were truly excellent
  • Nonfat Greek yogurt
  • Apple
  • Coffee w./ almond milk

Dinner:

  • Green Curry Ramen with Chicken Katsu at Samurai Noodle Bar & Grill, Mystic CT
  • Mango Boba Smoothie at Samurai Noodle Bar & Grill, Mystic CT
  • Samurai Noodle Bar & Grill is a fantastic restaurant; recommend. I was very happy with my dinner.

Monday, January 15:

Breakfast:

  • Fruit & Seed Breakfast Cookies – these were truly excellent.
  • Nonfat Greek yogurt
  • Orange
  • Coffee w./ almond milk

Dinner:

  • White Wine Chicken And Artichoke Hearts (did not meet blog standards; I don’t include all the culinary fails!)
  • Date And Almond Butter Truffles

Tuesday, January 16:

Breakfast:

  • Samoa Cookie Baked Oatmeal
  • Nonfat Greek yogurt
  • 1 cup of unsweetened applesauce
  • Coffee w./ almond milk

Dinner:

  • Pork and Green Bean Stir Fry – a good way to use up random stuff!
  • Orange Mini Pavlovas – these turned out very well; I want to bake more of these

Wednesday, January 17:

Breakfast:

  • Samoa Cookie Baked Oatmeal
  • Nonfat Greek yogurt
  • Orange
  • Coffee w./ almond milk

Dinner:

  • Penne With Chicken and Peppers – used up random veggies and chicken thighs.
  • Spinach Salad
  • Orange Pavlovas

Thursday, January 18:

Breakfast:

  • Samoa Cookie Baked Oatmeal
  • Nonfat Greek yogurt
  • 1 cup of green grapes
  • Coffee w./ almond milk

Dinner:

  • Easy Apple Cinnamon Chicken – this was fantastic, candy-cinnamon sauce.
  • Cinnamon Roasted Cauliflower – my favorite way to cook cauliflower without a doubt!
  • Farro
  • Canned fruit cocktail

I’ve always liked cooking, but we used to eat crap a lot — like buttery mashed potatoes, creamy sauces and rich desserts. Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change. Following his heart attack, we needed to cut sodium, sugar, saturated fats (you know, most of our favorite foods!)

I was extremely proud of the tiny marzipan gourds I was extremely proud of the tiny marzipan gourds and pumpkins I made for Thanksgiving. Not healthy or low-calorie at all, but they’re made of almonds and therefore high in fiber and heart-healthy monounsaturated fat, right?
