Whole Grain Applesauce Cake

What’s better than applesauce spice cake in September? I love cake, and whole grain cake can be just as yummy as cake made with white flour. I happened to have a bunch of spelt, buckwheat and oat bran in my pantry that need to be used up, so I thought I could make a heart-healthy applesauce cake with some heartier whole grains. This was a hit! My kids didn’t notice it was a whole grain cake.

Whole Grain Applesauce Cake

Ingredients

  • ½ cup whole spelt flour
  • ½ cup buckwheat flour
  • ¼ cup oat bran
  • ¼ cup ground flaxseed meal
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¾ cup unsweetened applesauce
  • ¾ cup brown sugar (firmly packed)
  • ¼ cup liquid egg whites
  • ½ tablespoon vanilla extract
  • ½ cup skim milk
  • 2 tablespoon unsalted butter (melted)
  • 2 teaspoon course sugar (like Sugar in the Raw or sanding sugar)

Instructions

  • Preheat the oven to 350 °F. Lightly spray an 8×8-inch baking dish with nonstick spray.
  • In a large bowl, whisk together the spelt and buckwheat flour, oat bran, flax meal, baking soda, baking powder, cinnamon, ginger, nutmeg and salt.
  • In a second bowl, whisk together the applesauce, egg whites, and sugar.
  • Whisk the milk and vanilla extract into the applesauce mixture.
  • Stir in the melted butter (I like to zap butter for 30 seconds in the microwave to melt it)
  • Pour the flour mixture into the wet ingredients, and stir the wet and dry ingredients together. Pour the batter into the prepared baking dish and sprinkle course sugar on top for decoration.
  • Bake for about 30 minutes, until a knife or skewer inserted into the center of the cake comes out clean.

Hello, world!

I’ve always liked cooking, but we used to eat crap a lot — like buttery mashed potatoes, creamy sauces and rich desserts. Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change. Following his heart attack, we needed to cut sodium, sugar, saturated fats (you know, most of our favorite foods!)
