Blueberry almond baked oatmeal is a delicious, healthy and filling breakfast

I love almond-flavored things.

Baked oatmeal is my favorite thing ever because it’s convenient, filling, and easy to meal prep. I wouldn’t bother to eat a relatively-wholesome breakfast if it wasn’t already prepared, in the fridge, ready to go first thing in the morning.

I don’t ever reheat this — I just grab it from the fridge and eat it cold. You, however, can reheat this if you want. I suspect that baked oatmeal reheats particularly well.

Blueberry Almond Baked Oatmeal

Ingredients

  • 1½ cups unsweetened apple sauce
  • ¼ cup liquid egg whites
  • ½ teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup milk of your choice
  • 2 cups uncooked old fashioned oats
  • 2 cups blueberries
  • ½ cup sliced almonds

Instructions

  • Pre-heat oven to 375 °F
  • Spray an 8×8-inch baking dish with nonstick spray
  • Whisk together the applesauce, egg, egg whites, vanilla extract, almond extract, baking powder and salt
  • Stir in the milk
  • Stir in the uncooked oats
  • Stir in the 2 cups of blueberries and ¼ cup of the almonds
  • Pour the mixture into the baking dish and sprinkle the remaining ¼ cup almonds on top
  • Bake for 45 minutes, or until a toothpick or knife inserted into the center of the oatmeal comes out clean. If you're using frozen blueberries, you might need to bake the oatmeal a little longer (about one hour), so keep your eyes on it!

Hello, world!

I’ve always liked cooking, but we used to eat crap a lot — like buttery mashed potatoes, creamy sauces and rich desserts. Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change. Following his heart attack, we needed to cut sodium, sugar, saturated fats (you know, most of our favorite foods!)
