Pre-heat oven to 375 °F
Spray an 8x8-inch baking dish with nonstick spray
Whisk together the applesauce, egg, egg whites, vanilla extract, almond extract, baking powder and salt
Stir in the milk
Stir in the uncooked oats
Stir in the 2 cups of blueberries and ¼ cup of the almonds
Pour the mixture into the baking dish and sprinkle the remaining ¼ cup almonds on top
Bake for 45 minutes, or until a toothpick or knife inserted into the center of the oatmeal comes out clean. If you're using frozen blueberries, you might need to bake the oatmeal a little longer (about one hour), so keep your eyes on it!
