So the batter needs to sit in the fridge overnight, but once you’ve got the batter ready, the actual cooking-of-the-crepes is super easy! I was intimidated by the entire idea of trying to make crepes, and was pleasantly surprised by how easy it was.
Strawberry Crepes

Crepes
- ¾ cup all-purpose flour
- ¾ cup skim milk
- 3 tablespoon liquid egg whites
- 2 tablespoon butter
- ½ tablespoon sugar
- 1-2 teaspoon water (as needed)
Strawberry sauce
- 2½ cups sliced strawberries
- 2 tablespoon orange juice
- 3 tablespoon brown sugar
Instructions
- Using an electric mixer, beat all of the ingredients together except the water on high speed for about 1 minute. The batter will be thin! Cover it tightly with plastic wrap and put it in the fridge overnight.
- Mix together the strawberry sauce ingredients in a bowl, cover tightly with plastic wrap, and put it in the fridge overnight.
- When you're ready to cook the crepes, line a plate with paper towels.
- Spray a small skillet with nonstick spray and heat over medium heat for about 5 minutes, until the pan is pretty hot.
- Spoon about 2 tablespoonfulls of crepe batter into the hot skillet and quickly spread it around with a spatula. These cook fast! You might only need to cook the crepe for about 2 minutes until it's slightly solidified on the bottom, then use a large spatula to flip it over like a pancake, and cook an additional 30 seconds on the other side. Then, transfer it to the paper towel-lined plate.
- Spoon the strawberry sauce inside each crepe and roll it up. You can also spoon more strawberry sauce over the top, if you like.
