Using an electric mixer, beat all of the ingredients together except the water on high speed for about 1 minute. The batter will be thin! Cover it tightly with plastic wrap and put it in the fridge overnight.
Mix together the strawberry sauce ingredients in a bowl, cover tightly with plastic wrap, and put it in the fridge overnight.
When you're ready to cook the crepes, line a plate with paper towels.
Spray a small skillet with nonstick spray and heat over medium heat for about 5 minutes, until the pan is pretty hot.
Spoon about 2 tablespoonfulls of crepe batter into the hot skillet and quickly spread it around with a spatula. These cook fast! You might only need to cook the crepe for about 2 minutes until it's slightly solidified on the bottom, then use a large spatula to flip it over like a pancake, and cook an additional 30 seconds on the other side. Then, transfer it to the paper towel-lined plate.
Spoon the strawberry sauce inside each crepe and roll it up. You can also spoon more strawberry sauce over the top, if you like.
