Apple Cinnamon Pork Roast

Knoebels Amusement Resort is one of the most magical places in the entire world. The food at Knoebels is fabulous, and one of their stand-out dishes has always been their apple-cinnamon pork-chop-on-a-stick, which Eric and I have been trying to recreate every autumn for years.

Apple cinnamon pork-chop-on-a-stick is the most fall-tasting meat-on-a-stick you can even imagine. This pork roast is my homage to Knoebels, without a stick.

I served this with Cauliflower Mashed Potatoes and steamed broccoli.

And I can’t with food bloggers who write a 5,000-word essay of drivel before getting to the actual recipe.

Apple Cinnamon Pork Roast

Servings: 4

Ingredients

  • 1 pound pork loin roast
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper

Applesauce

  • 4 apples (sliced)
  • ¼ cup brown sugar
  • 1 tablespoon lemon juice
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg

Instructions

  • Preheat the oven to 400 °F
  • Season the pork with salt and pepper, put it in a baking dish, and bake in the oven for about 35 minutes (or until a thermometer registers an internal temperature of 160 °F )
  • Meanwhile, cut up the apples and put them in a saucepan with the brown sugar, lemon juice, cinnamon, and nutmeg. Cook the apple mixture over medium-high heat until it boils.
  • After the apple mixture comes to a boil, reduce the heat to medium-low and simmer for about 20 minutes while the pork is cooking in the oven.
  • When the pork comes out of the oven, let it rest for about 5 minutes. Cut into slices across the grain and spoon the apples over the top.

I’ve always liked cooking, but we used to eat crap a lot — like buttery mashed potatoes, creamy sauces and rich desserts. Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change.
