Healthy spaghetti carbonara

I had a bunch of leftover ham…

No, it’s not actually a carbonara, it’s milk thickened with flour, with some various types of cheese added to make it “creamy.” My kids really liked this, and peas are one of the very few green things they actually like eating.

I used green-colored spinach pasta, but you can use any noodles of your choice.

Lightened-Up Low Fat Spaghetti Carbonara

Lightened-up Spaghetti Carbonara

Ingredients

  • 8 ounces spinach pasta (or any spaghetti of your choice)
  • 1 cup skim milk
  • 1 tablespoon flour
  • 4 ounces Neufchâtel cheese
  • 2 ounces Parmesan cheese
  • 5 ounces cooked ham or turkey bacon (chopped)
  • 1 cup frozen peas (thaw before adding to sauce)

Instructions

  • Cook spaghetti according to package instructions, omitting salt
  • Whisk flour into milk and bring to boil in a saucepan. Once the milk boils, turn the heat down to low and simmer for 2 minutes until the milk thickens. Stir in the cream cheese and parmesan cheese until incorporated.
  • Be sure to chop the ham (or turkey bacon) into small cubes.
  • Add the chopped ham and peas to the sauce, and toss with the cooked pasta.

I’ve always liked cooking, but we used to eat crap a lot — like buttery mashed potatoes, creamy sauces and rich desserts. Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change.
