This is my go-to heart healthy cornbread recipe. What makes this cornbread so heart-healthy? No added sugar, minimal added salt, and minimal (mono-unsaturated) fat.
This is a great side dish for Slow Cooker Beef Chili, Quick Turkey Chili, or Vegan White Bean Soup.

Ingredients
- 1 cup all purpose flour
- ¾ cup yellow cornmeal
- 2 teaspoon baking powder
- ¼ teaspoon salt
- 1 egg
- 1 cup skim milk
- 1 tablespoon canola oil
- 1 tablespoon melted butter
Instructions
- Preheat the oven to 400 °F. Lightly spray a 9-inch round pie plate or an 8×8-inch baking dish with nonstick spray.
- Whisk together the flour, cornmeal, baking powder and salt in a medium-sized bowl.
- In a second bowl, beat the egg with a whisk. Whisk in the skim milk, canola oil and melted butter.
- Pour the wet ingredients into the flour mixture and stir it with a spatula until the wet and dry ingredients are fully incorporated.
- Pour the batter into the prepared pie plate or baking dish.
- Bake in the hot oven for about 20 minutes. The cornbread is done when a knife or toothpick inserted into the center comes out clean.
