Healthy air fryer rosemary potatoes are super-simple to make with just a few ingredients. The air fryer also roasts your roasted potatoes a little quicker than the oven does!

I wouldn’t say air fryers are a must-have kitchen tool, but they’re certainly fun to play with! This is the exact air fryer I have, and it’s a lot of fun. These air fryer roasted potatoes can also be roasted in the oven just as easily.

I served this as a side with Creamy White Wine Fish and Bacon Brussels Sprouts. This would be a great side for Christmas dinner too!

Air Fryer Rosemary Potatoes

Servings: 4

Ingredients

  • 1½ pounds tiny potatoes (cut in half)
  • 1 tablespoon olive oil
  • 1 tablespoon chopped fresh rosemary (or 1 teaspoon dried)
  • ¼ teaspoon ground black pepper

Instructions

  • Preheat the air fryer to 400 °F
  • In a large bowl, toss together the potato halves, olive oil, black pepper and rosemary.
  • Transfer the potatoes to the air fryer basket. Cook for 10 minutes, shake the basket, and continue to cook for another 10 minutes.

Oven instructions:

  • Preheat the oven to 400 °F . Lightly spray a foil-lined baking sheet with nonstick spray.
  • Arrange the potatoes in a single layer on the baking sheet.
  • Roast at 400 °F for about 30 minutes. Stir and flip the potatoes at the 15-minute mark.

I’ve always liked cooking, but we used to eat crap a lot — like buttery mashed potatoes, creamy sauces and rich desserts. Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change. Following his heart attack, we needed to cut sodium, sugar, saturated fats (you know, most of our favorite foods!)
