Apple cinnamon porridge

On weekends, I make fancy breakfasts. This is a pretty basic porridge with raisins and cut-up apples. I used Bobs Red Mill 7-Grain cereal instead of my usual go-to oatmeal, just for something different. I’ve had that 7-Grain cereal sitting around in my pantry for a long time and wanted to do something interesting with it.

Apple Cinnamon Porridge

Servings: 1

Ingredients

  • ½ cup dry cereal (I used Bobs Red Mill 7-Grain Cereal)
  • 1 chopped apple (I used a gala apple)
  • 2 tablespoon raisins
  • 1 cup skim milk
  • ¼ teaspoon cinnamon
  • ⅛ teaspoon ground ginger
  • 1 pinch ground nutmeg
  • 1 pinch ground cloves
  • ½ tablespoon brown sugar or maple syrup
  • ½ teaspoon vanilla extract
  • 1 tablespoon heavy whipping cream

Instructions

  • In a small saucepan, stir together the dry cereal, apples, raisins, cinnamon, ginger, nutmeg, cloves and skim milk. Put the lid on and bring to a boil over medium-high heat.
  • As soon as the pot boils, turn down to medium-low and let the mixture simmer for about 10 minutes until the cereal, apples and raisins are soft and most of the milk has been absorbed.
  • At the end of cooking, stir in the sugar, heavy cream and vanilla extract.

Hello, world!

I’ve always liked cooking, but we used to eat crap a lot — like buttery mashed potatoes, creamy sauces and rich desserts. Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change. Following his heart attack, we needed to cut sodium, sugar, saturated fats (you know, most of our favorite foods!)
