Sometimes it’s fun to switch it up and have a savory breakfast. Heart healthy breakfast tacos!

Breakfast tacos with plant based crumbles, egg whites and pico de gallo

Lightlife isn’t paying me to shill their plant-based pretend-meat crumbles, but they 100% should be. I will gladly shill their fake meat crumbles – my children don’t even realize it’s fake meat! It’s awesome and delicious, tastes somewhat like ground pork.

Breakfast Tacos

Ingredients

  • 1 fajita-size soft flour tortilla
  • ¼ cup liquid egg whites
  • 1 tablespoon salsa
  • 1 green onion (chopped)
  • 2 ounces plant-based protein crumbles
  • 1 ounce mild cheddar cheese

Instructions

  • First, spray a skillet with nonstick spray and preheat over medium heat.
  • Stir together the egg white, salsa and chopped green onions. Cook the egg in the skillet like you would an omelette or scrambled eggs.
  • Lay the eggs on top of the tortilla with the protein crumbles and shredded cheese. Fold the tortilla in half, and place it back in the skillet.
  • Turn the heat on the stove down to medium-low, cover the skillet with a lid and toast the folded tortilla for 2 to 3 minutes each side, until the cheese is melted and the tortilla is lightly browned.
  • Top with more salsa if you want.

Hello, world!

I’ve always liked cooking, but we used to eat crap a lot — like buttery mashed potatoes, creamy sauces and rich desserts. Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change. Following his heart attack, we needed to cut sodium, sugar, saturated fats (you know, most of our favorite foods!)
