Lightlife isn’t paying me to shill their plant-based pretend-meat crumbles, but they 100% should be. I will gladly shill their fake meat crumbles – my children don’t even realize it’s fake meat! It’s awesome and delicious, tastes somewhat like ground pork.
Breakfast Tacos

Ingredients
- 1 fajita-size soft flour tortilla
- ¼ cup liquid egg whites
- 1 tablespoon salsa
- 1 green onion (chopped)
- 2 ounces plant-based protein crumbles
- 1 ounce mild cheddar cheese
Instructions
- First, spray a skillet with nonstick spray and preheat over medium heat.
- Stir together the egg white, salsa and chopped green onions. Cook the egg in the skillet like you would an omelette or scrambled eggs.
- Lay the eggs on top of the tortilla with the protein crumbles and shredded cheese. Fold the tortilla in half, and place it back in the skillet.
- Turn the heat on the stove down to medium-low, cover the skillet with a lid and toast the folded tortilla for 2 to 3 minutes each side, until the cheese is melted and the tortilla is lightly browned.
- Top with more salsa if you want.
