First, spray a skillet with nonstick spray and preheat over medium heat.
Stir together the egg white, salsa and chopped green onions. Cook the egg in the skillet like you would an omelette or scrambled eggs.
Lay the eggs on top of the tortilla with the protein crumbles and shredded cheese. Fold the tortilla in half, and place it back in the skillet.
Turn the heat on the stove down to medium-low, cover the skillet with a lid and toast the folded tortilla for 2 to 3 minutes each side, until the cheese is melted and the tortilla is lightly browned.
Top with more salsa if you want.
