My husband and I have been obsessed with Ruby Tuesday’s salad bar since long before we had kids. One of the best items in Ruby Tuesday’s salad bar is that broccoli salad – slathered in mayonnaise, with bacon and cheese. My father-in-law bought us a ton of extra broccoli so we asked ourselves whether it was possible to create a lighter, heart-healthier version of Ruby Tuesday’s broccoli salad. It came out well.
I’m lucky that my children like eating broccoli, especially when cheese is involved.

- ½ cup chopped red onion
- 2 ounces ham or turkey bacon (finely diced)
- 1 ounce reduced-fat cheddar cheese (shredded)

- 1 tablespoon lemon juice
- 1 teaspoon granulated white sugar
- ¼ teaspoon black pepper
