Healthy broiled marinated fish

Hey, this was a really good way to cook white fish. My kindergartener ate it and said “What did you do to this chicken to make it so yummy?” I marinated the fish in white wine vinegar, some herbs and Worcestershire sauce. Really easy for a busy weeknight.

And only 115 calories! Fish is such a good source of lean protein, and it’s always super-filling.

I served this fish with Lemon-Thyme Carrots and Air Fryer Roast Potatoes on the side.

Broiled Marinated Fish

Ingredients

  • 1 pound mild white fish

Marinade Ingredients

  • ⅓ cup white wine vinegar
  • 1 tablespoon chopped fresh tarragon (½ teaspoon dried)
  • 2 teaspoon olive oil
  • 1 teaspoon Worcestershire sauce
  • 1 bay leaf

Instructions

  • Combine the marinade ingredients in a bowl. Add the fish, turning to coat.
  • Cover the bowl with plastic wrap and let it marinate in the fridge for 30 minutes (longer than that, and the fish will start to turn a little bit rubbery)
  • When you're ready to cook the fish, preheat the broiler on "high"
  • Lightly spray a glass baking dish or broiler pan with nonstick spray. Add the fish and broil for 5 minutes.
  • Flip the fish over and broil for another 5 minutes.

I’ve always liked cooking, but we used to eat crap a lot — like buttery mashed potatoes, creamy sauces and rich desserts. Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change. Following his heart attack, we needed to cut sodium, sugar, saturated fats (you know, most of our favorite foods!)
