
Frozen yogurt sweetened with apricot fruit spread, and a mix of summer fruits that didn’t really require any additional sugar. My kids loved them!
Fruit and Yogurt Ice Pops
Servings: 8
Equipment
- 8-cavity ice pop mold (or 8 small paper cups)
Ingredients
- 1½ cups plain Greek Yogurt
- ½ cup apricot fruit spread
- 1 teaspoon vanilla extract
- 1 cup raspberries
- 1 peach (sliced or chopped)
Instructions
- Puree the raspberries in a food processor.
- Puree the peaches in a food processor.
- Mix together the yogurt, apricot spread and vanilla extract
- Layer the yogurt, the raspberries and the peaches evenly into 8 popsicle molds. Use a dull knife or a skewer to mix the layers up a little bit.
- Place in the freezer for 4 to 6 hours. If your popsicle mold doesn't come with sticks, you can insert popsicle sticks after the first hour or so of freezing.
