Fruit and Yogurt Ice Pops

Equipment

  • 8-cavity ice pop mold (or 8 small paper cups)

Ingredients

  • cups plain Greek Yogurt
  • ½ cup apricot fruit spread
  • 1 teaspoon vanilla extract
  • 1 cup raspberries
  • 1 peach (sliced or chopped)

Instructions

  • Puree the raspberries in a food processor.
  • Puree the peaches in a food processor.
  • Mix together the yogurt, apricot spread and vanilla extract
  • Layer the yogurt, the raspberries and the peaches evenly into 8 popsicle molds. Use a dull knife or a skewer to mix the layers up a little bit.
  • Place in the freezer for 4 to 6 hours. If your popsicle mold doesn't come with sticks, you can insert popsicle sticks after the first hour or so of freezing.
