Fruit is always the best dessert! Here’s an easy way to give canned pears a holiday glow-up with ginger and vanilla flavors.

Vanilla-Ginger Baked Pears

Ingredients

  • 1 15oz can canned pears in juice (rinsed and drained, juice reserved)
  • 2 tablespoon sugar
  • 1 teaspoon lemon juice
  • ¼ teaspoon vanilla bean paste (or vanilla extract)
  • ¼ teaspoon fresh grated ginger

Instructions

  • Preheat the oven to 350 °F
  • Arrange the pears in a baking dish and pour about ½ cup of the juice that came in their can on top.
  • In a small bowl, stir together the sugar, lemon juice, vanilla bean paste and fresh ginger
  • Fill the cavity of each pear half with a little bit of the sugar mixture
  • Pop the baking dish in the oven for 30 minutes until the pear halves are lightly brown.

I’ve always liked cooking, but we used to eat crap a lot — like buttery mashed potatoes, creamy sauces and rich desserts. Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change. Following his heart attack, we needed to cut sodium, sugar, saturated fats (you know, most of our favorite foods!)
