Heart Healthy Cornbread

This is my go-to heart healthy cornbread recipe. What makes this cornbread so heart-healthy? No added sugar, minimal added salt, and minimal (mono-unsaturated) fat.

This is a great side dish for Slow Cooker Beef Chili, Quick Turkey Chili, or Vegan White Bean Soup.

Ingredients

  • 1 cup all purpose flour
  • ¾ cup yellow cornmeal
  • 2 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 egg
  • 1 cup skim milk
  • 1 tablespoon canola oil
  • 1 tablespoon melted butter

Instructions

  • Preheat the oven to 400 °F. Lightly spray a 9-inch round pie plate or an 8×8-inch baking dish with nonstick spray.
  • Whisk together the flour, cornmeal, baking powder and salt in a medium-sized bowl.
  • In a second bowl, beat the egg with a whisk. Whisk in the skim milk, canola oil and melted butter.
  • Pour the wet ingredients into the flour mixture and stir it with a spatula until the wet and dry ingredients are fully incorporated.
  • Pour the batter into the prepared pie plate or baking dish.
  • Bake in the hot oven for about 20 minutes. The cornbread is done when a knife or toothpick inserted into the center comes out clean.

I’ve always liked cooking, but we used to eat crap a lot — like buttery mashed potatoes, creamy sauces and rich desserts. Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change. Following his heart attack, we needed to cut sodium, sugar, saturated fats (you know, most of our favorite foods!)
