Healthy air fryer roast potatoes

Crispy potatoes without extra fat and oil! I really liked the seasoning blend I used with these potatoes; very zesty without any added salt. There’s no need to peel the potatoes before cooking them; potato skins are full of nutrition, don’t waste them!

Air Fryers are awesome! I wouldn’t say air fryers are actually a must-have, but they’re really fun to play with. I have this one.

You could cook these potatoes in a 400° oven for 30 minutes, stirring the potatoes once at the 15-minute mark.

I served this as a side dish with Broiled Marinated Fish

Ingredients

  • 3 Russet potatoes (cut into ½-inch cubes)
  • 2 teaspoon olive oil

  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ teaspoon onion powder
  • ¼ teaspoon ground black pepper

Instructions

  • Preheat the air fryer to 400 °F
  • Chop the potatoes into ½-inch cubes.
  • In a large bowl, toss the potatoes with the olive oil and seasonings.

Hello, world!

I’ve always liked cooking, but we used to eat crap a lot — like buttery mashed potatoes, creamy sauces and rich desserts. Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change. Following his heart attack, we needed to cut sodium, sugar, saturated fats (you know, most of our favorite foods!)
