Lightened up steak and gravy

A lightened-up steak & gravy dinner. My family loves those “meat and potatoes” meal. This was super-simple to make; took about 30 minutes total.

I served this braised steak and gravy with a side of “bubble and squeak” -inspired mashed potatoes.

Braised Steak & Gravy

Servings: 4

Ingredients

  • 16 ounces boneless sirloin steak (cut into 1-inch cubes)
  • 2 garlic cloves (minced)
  • 1 cup pearl onions (thawed)
  • 1 cup low sodium beef broth
  • ⅓ cup red wine
  • 2 tablespoon cornstarch
  • ½ teaspoon ground black pepper
  • 2 tbsop chopped fresh parsley

Instructions

  • Lightly spray a skillet with nonstick spray.
  • Cook the beef over medium-high heat for 8 to 10 minutes, or until well-browned.
  • Stir in the minced garlic, and cook for 1 minute.
  • Pour the beef broth and red wine into a large measuring cup. Whisk in the cornstarch.
  • Pour the broth-wine-cornstarch mixture into the skillet. Scrape up any browned bits that have accumulated at the bottom of the pan. Bring to a boil over medium-high heat.
  • When the mixture boils, add the thawed pearl onions, and turn the heat down to medium-low. Cover the skillet with a lid and simmer for 15 to 20 minutes or so.
  • Stir in the black pepper and chopped parsley.

I’ve always liked cooking, but we used to eat crap a lot — like buttery mashed potatoes, creamy sauces and rich desserts. Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change. Following his heart attack, we needed to cut sodium, sugar, saturated fats (you know, most of our favorite foods!)
