I think peaches and ginger go well together. You’ve gotta get those fresh peaches when you can, you know? This is a simple baked oatmeal recipe, and you don’t need to be too precise about any of it.
Peach Ginger Oatmeal

Ingredients
- 1½ cups unsweetened applesauce
- ¼ cup liquid egg whites
- 1 teaspoon vanilla extract
- 1 teaspoon grated or finely minced ginger root
- 1 teaspoon powdered ginger
- 1 teaspoon baking powder
- ¼ tsp salt
- 1 cup milk of your choice
- 2 cups uncooked old fashioned oats
- 2 peaches (sliced or chopped)
Instructions
- Pre-heat the oven to 375 °F
- Spray an 8×8-inch baking dish with nonstick spray
- Whisk together the applesauce, egg, egg white, grated and powdered ginger, vanilla extract, baking soda and salt
- Stir in the milk
- Stir in the uncooked oats
- Stir in the sliced or chopped peaches
- Pour into baking dish and bake for 45 minutes, until a toothpick or knife inserted into the center of the oatmeal comes out clean. If you're using frozen peaches, you might need to bake a little longer (about one hour), so keep your eyes on it!
