Peach Ginger Baked Oatmeal

I think peaches and ginger go well together. You’ve gotta get those fresh peaches when you can, you know? This is a simple baked oatmeal recipe, and you don’t need to be too precise about any of it.

Peach Ginger Oatmeal

Ingredients

  • 1½ cups unsweetened applesauce
  • ¼ cup liquid egg whites
  • 1 teaspoon vanilla extract
  • 1 teaspoon grated or finely minced ginger root
  • 1 teaspoon powdered ginger
  • 1 teaspoon baking powder
  • ¼ tsp salt
  • 1 cup milk of your choice
  • 2 cups uncooked old fashioned oats
  • 2 peaches (sliced or chopped)

Instructions

  • Pre-heat the oven to 375 °F
  • Spray an 8×8-inch baking dish with nonstick spray
  • Whisk together the applesauce, egg, egg white, grated and powdered ginger, vanilla extract, baking soda and salt
  • Stir in the milk
  • Stir in the uncooked oats
  • Stir in the sliced or chopped peaches
  • Pour into baking dish and bake for 45 minutes, until a toothpick or knife inserted into the center of the oatmeal comes out clean. If you're using frozen peaches, you might need to bake a little longer (about one hour), so keep your eyes on it!

Hello, world!

I’ve always liked cooking, but we used to eat crap a lot — like buttery mashed potatoes, creamy sauces and rich desserts. Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change. Following his heart attack, we needed to cut sodium, sugar, saturated fats (you know, most of our favorite foods!)
