Pre-heat the oven to 375 °F
Spray an 8x8-inch baking dish with nonstick spray
Whisk together the applesauce, egg, egg white, grated and powdered ginger, vanilla extract, baking soda and salt
Stir in the milk
Stir in the uncooked oats
Stir in the sliced or chopped peaches
Pour into baking dish and bake for 45 minutes, until a toothpick or knife inserted into the center of the oatmeal comes out clean. If you're using frozen peaches, you might need to bake a little longer (about one hour), so keep your eyes on it!
