Peanut Butter Banana Breakfast Bowl

Peanut butter and bananas mixed with Greek yogurt and whole grain cereal is a heart healthy breakfast.

I eat an incredible amount of Greek yogurt because it’s extremely versatile and delicious. I’m not being paid to shill Fage, but my husband and I were super-depressed when his doctor told us that we needed to switch over the fat-free/low-fat dairy products. Yuck, fat-free yogurt! Yuck!! So we bought every brand of fat-free yogurt we could find and taste-tested them all, that Fage’s 0% yogurt was actually very yummy and heart healthy, so that’s my go-to and I eat it every day. My family burns through 3 of those large containers every week.

I’m also not shilling Kashi — ordinarily I dislike Kashi because their cereal is too “healthy” for my liking — but their Kashi Go Peanut Butter Crunch is legit amazing. I don’t know that it’s a particularly “healthy” cereal, and the sugar content / calorie count was quite a bit too high, but my KINDERGARTENER and PRESCHOOLER inhaled the whole box in one weekend, so a good way to get small children to willingly eat protein and fiber.

I’m also not shilling PB2, but I keep a jar of it around because it lasts forever and it’s also a really good ways to save calories and to get that peanut butter flavor for a lot less fat. I don’t really eat it as a peanut butter replacement, but I use it a lot in baking when I need a peanut butter taste but need to limit fat (as someone with minimally-functional gallbladder, I always need to keep an eye on fat intake.)

Peanut Butter Banana Breakfast Bowl

Ingredients

  • 1 banana
  • 1 cup nonfat Greek yogurt
  • 2 tablespoons peanut butter powder
  • 2 tablespoons maple syrup
  • 1 tablespoon peanut butter
  • 1 teaspoon vanilla extract
  • 1 ounce Kashi Go Peanut Butter Crunch

Instructions

  • Mash the banana
  • Stir in the yogurt, peanut butter powder, peanut butter, maple syrup and vanilla extract.
  • Sprinkle the cereal on top. I'm not getting paid to say this but I really should be because I need to say that this cereal was amazing, and my CHILDREN INHALED THE ENTIRE BOX IN ONE WEEKEND. A box of Kashi. Children. Ordinarily, Kashi is too excessively "healthy" tasting to be delicious, so this was a surprise, but I highly recommend. I don't think the cereal was necessarily "healthy" at all (lots of sugar and calories), but if you need your kids to willingly eat a bunch of protein and fiber, this is fabulous cereal.

Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change.
