Healthy ice pops for summer are low in added sugar and high in fruit! If you don’t have popsicle molds, you can use paper cups.
Strawberry Banana Ice Pops

Equipment
- 8-cavity ice pop mold (or 8 paper cups)
Ingredients
Banana Layer
- 2 bananas
- ½ cup apricot nectar
- ½ tablespoon brown sugar
- 1 teaspoon vanilla extract
- ½ teaspoon lemon juice
Strawberry layer
- 2 cups sliced strawberries
- ½ cup apricot nectar
- ½ tablespoon brown sugar
- ½ teaspoon lemon juice
- ½ teaspoon almond extract
Instructions
- Blend all the ingredients for the banana layer together in a food processor. Pour evenly into 8 popsicle molds.
- Blend the ingredients for the strawberry layer in a food processor, and pour evenly on top of the banana layer.
- Use a dull knife or wooden skewer to swirl the banana and strawberry layers together.
- Place in the freezer for 4 to 6 hours. If your popsicle mold doesn't come with sticks, you can insert wooden sticks after the first hour or so of freezing (so the sticks won't fall over)
