Strawberry Banana Ice Pops

Healthy ice pops for summer are low in added sugar and high in fruit! If you don’t have popsicle molds, you can use paper cups.

Strawberry Banana Ice Pops

Equipment

  • 8-cavity ice pop mold (or 8 paper cups)

Ingredients

Banana Layer

  • 2 bananas
  • ½ cup apricot nectar
  • ½ tablespoon brown sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon lemon juice

Strawberry layer

  • 2 cups sliced strawberries
  • ½ cup apricot nectar
  • ½ tablespoon brown sugar
  • ½ teaspoon lemon juice
  • ½ teaspoon almond extract

Instructions

  • Blend all the ingredients for the banana layer together in a food processor. Pour evenly into 8 popsicle molds.
  • Blend the ingredients for the strawberry layer in a food processor, and pour evenly on top of the banana layer.
  • Use a dull knife or wooden skewer to swirl the banana and strawberry layers together.
  • Place in the freezer for 4 to 6 hours. If your popsicle mold doesn't come with sticks, you can insert wooden sticks after the first hour or so of freezing (so the sticks won't fall over)

Cider reduced to a syrup and frozen, for when you want cider but it's too hot and humid to be fall yet.

Hello, world!

I’ve always liked cooking, but we used to eat crap a lot — like buttery mashed potatoes, creamy sauces and rich desserts. Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change. Following his heart attack, we needed to cut sodium, sugar, saturated fats (you know, most of our favorite foods!)
