Strawberry Crepes

Strawberry crepes are a healthy and low calorie fruit-filled dessert

So the batter needs to sit in the fridge overnight, but once you’ve got the batter ready, the actual cooking-of-the-crepes is super easy! I was intimidated by the entire idea of trying to make crepes, and was pleasantly surprised by how easy it was.

Strawberry Crepes

Prep Time10 minutes mins
Cook Time10 minutes mins
Resting Time8 hours hrs
Servings: 6

Equipment

  • Electric mixer

Ingredients

Crepes

  • ¾ cup all-purpose flour
  • ¾ cup skim milk
  • 3 tablespoon liquid egg whites
  • 2 tablespoon butter
  • ½ tablespoon sugar
  • 1-2 teaspoon water (as needed)

Strawberry sauce

  • 2½ cups sliced strawberries
  • 2 tablespoon orange juice
  • 3 tablespoon brown sugar

Instructions

  • Using an electric mixer, beat all of the ingredients together except the water on high speed for about 1 minute. The batter will be thin! Cover it tightly with plastic wrap and put it in the fridge overnight.
  • Mix together the strawberry sauce ingredients in a bowl, cover tightly with plastic wrap, and put it in the fridge overnight.
  • When you're ready to cook the crepes, line a plate with paper towels.
  • Spray a small skillet with nonstick spray and heat over medium heat for about 5 minutes, until the pan is pretty hot.
  • Spoon about 2 tablespoonfulls of crepe batter into the hot skillet and quickly spread it around with a spatula. These cook fast! You might only need to cook the crepe for about 2 minutes until it's slightly solidified on the bottom, then use a large spatula to flip it over like a pancake, and cook an additional 30 seconds on the other side. Then, transfer it to the paper towel-lined plate.
  • Spoon the strawberry sauce inside each crepe and roll it up. You can also spoon more strawberry sauce over the top, if you like.

Hello, world!

I’ve always liked cooking, but we used to eat crap a lot — like buttery mashed potatoes, creamy sauces and rich desserts. Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change. Following his heart attack, we needed to cut sodium, sugar, saturated fats (you know, most of our favorite foods!)
