Strawberry Frozen Yogurt

OMG, this was awesome. I don’t own an ice cream machine, so I always feel like I’m limited in my ability to make frozen desserts, but this was awesome and my kindergartener is obsessed with it. We’d just been out strawberry picking the day before, so it was a great way to get all that fresh strawberry flavor in (use more or less sugar depending on the sweetness of your strawberries.)

This is great to make year-round with frozen strawberries, since the strawberries need to already be frozen in order to make this.

Use this froyo in Banana Split Pie, another frozen dessert that was a huge hit with my kindergartener and preschooler.

Strawberry Froyo

Ingredients

  • 2 cups frozen sliced strawberries
  • 1 cup nonfat Greek yogurt
  • ¼ cup sugar (more or less to taste)
  • 2 teaspoon lemon juice or orange juice
  • 1 teaspoon vanilla extract

Instructions

  • Be sure the strawberries are frozen! This is very important!! Don't thaw the strawberries!!! Put all the ingredients in a food processor and blend until well-mixed.
  • You can eat it right away, but the frozen yogurt will be quite soft. Better to spoon it into a container and transfer it to the freezer for 1 to 2 hours until it firms up. Then, you can scoop it just like ice cream.

Hello, world!

I’ve always liked cooking, but we used to eat crap a lot — like buttery mashed potatoes, creamy sauces and rich desserts. Then, my husband had a heart attack at age 38, and it was a terrifying wake-up call! Not wanting to leave our children fatherless, we knew we had to make a major change. Following his heart attack, we needed to cut sodium, sugar, saturated fats (you know, most of our favorite foods!)
