Wash the potatoes and cut them into strips (it's fine to leave the skin on!)
Preheat the air fryer to 380 °F
Toss the potato strips with 1 tablespoon olive oil, 1½ teaspoon garlic powder, ¼ teaspoon ground black pepper and just a pinch of salt.
You might need to air fry the potatoes in batches.
Air fry each batch of potatoes at 380 °F for about 12 to 15 minutes, until lightly browned and crisp.
Toss the potatoes with 1 ounce of grated Parmesan and some chopped parsley before serving.
