Apple Cinnamon Baked Oatmeal

Ingredients

  • cups unsweetened applesauce
  • cup brown sugar
  • 1 egg
  • ¼ cup liquid egg white
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ¼ tsp salt
  • 2 cups milk of your choice
  • 3 cups old fashioned rolled oats
  • 2 apples (I used gala apples)

Instructions

  • Preheat the oven to 375 °F. Lightly spray a 9x13-inch baking dish with nonstick spray.
  • In a large bowl, whisk together the applesauce and brown sugar.
  • Whisk in the egg and egg whites.
  • Whisk in the vanilla extract, baking powder, cinnamon, ginger, clove, and salt.
  • Stir in the milk
  • Stir in the oats
  • Peel, core and chop the apples. I used gala apples, but any type of sweet baking apple will do fine.
  • Stir the apples into the oatmeal mixture.
  • Pour the whole mixture into the prepared baking dish. Put it in the oven and bake for about 35 minutes. You'll know it's done when the edges are golden-brown and a knife or skewer inserted into the center of the oatmeal comes out clean.
