Fig & Walnut Baked Oatmeal

Ingredients

  • cup unsweetened applesauce
  • cup brown sugar
  • 1 egg
  • ¼ cup liquid egg whites
  • 1 tablespoon vanilla extract
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2 cups milk of your choice
  • 3 cups uncooked old fashioned rolled oats
  • 1 cup chopped dried figs (about 9 of them)
  • ½ cup chopped walnuts

Instructions

  • Preheat the oven to 375 °F. Lightly spray a 9x13-inch baking dish with nonstick spray.
  • Whisk the applesauce and brown sugar together.
  • Use the whisk to beat in the egg and egg whites
  • Whisk in the vanilla extract, baking powder and salt.
  • Stir in the milk
  • Stir in the oats
  • Stir in the chopped nuts and chopped figs
  • Pour the mixture into the prepared baking dish. Bake at for about 45 minutes at 375 °F. Oatmeal is done when the edges are golden-brown and a toothpick inserted into the center of the oatmeal comes out clean.
